Hello friends and welcome to my blog.Happy Sunday to y'all. On today's creative Sunday, I will be sharing the procedures on how to prepare Moi- Moi. To some extentent we Africans, Nigerians to be precise, have normalized cooking rice every sunday which is kinda funny. I'm back to my apartment and decided to try something new this Sunday.
Moi moi is a well known local dish in Nigeria which is simply referred to as baked beans.I normally see how my mum prepares it, so I decided to give it a try all by myself.
Ingredients are as follows;
- 2 tomato cups of beans
- Onions
- Crayfish
- Groundnut oil
- Fresh pepper
- Maggie
- Salt
- Boiled Eggs
Procedures:
- First I put a little amount of water into a bowl and put the beans inside the bowl so it could soak. I left it there for about 5 mins. This would make it easier for me to take off the shaft from the beans.

Then I began to gently mash up the beans inside the bowl with my hands so the shaft would come off. I did this for like 10 mins till I was satisfied with the outcome. Then I poured water inside the bowl so I could filter the shafts from the beans. I repeated the process for like 5 to 6 times until all the shafts were properly separated.

I proceeded to blend the beans. I don't have a blender in my apartment so I sent it to the market for them to blend it for me. I sliced some onions, added fresh pepper to blend with the beans.
N/B:I bought the pepper at the market while they were grinding the beans. That explains why there's no photo of the pepper.
- After blending the beans, I poured it into a bigger bowl so as to mix it properly with other ingredients to get the taste. I added a small amount of hot water because the bean mixture was thick and so I needed it to be a bit watery. I also added 2 cubes of Maggie, some salt to taste, groundnut oil and blended crayfish.
- After mixing it properly, I began to tie it up in a nylon. In each nylon, I put a desired quantity of the mixture and I also add a piece of the boiled egg into it.
N/B: You can also put smoked fish/meat inside.
- When I was done, I then set a big pot on the fire, filled it with a quarter amount of water and then put them inside the pot for it to cook and get baked. If the water is getting dry, I add more water to the pot and let it cook. It cooked for about 1 hr on a medium heat and then it was ready.
Well, that's it. I ate mine with rice and stew.
