Good morning to you all. Happy to start the week. I hope you all had a great weekend. Last week was a hell of a week although it was all good. However, I'm happy to be back. So I returned to my apartment yesterday after spending the election holiday with my parents, and I haven't really eaten anything substantial since. So I'll be preparing yam and egg sauce this morning for breakfast.
I used the following ingredients;
- Two eggs
- Fresh pepper
- Yam
- Groundnut oil
- Maggie
- Salt
- Tomatoes
- Onions
PROCEDURES:

I started by peeling the yam's back and then cutting it into little pieces. I then thoroughly wash the yam twice with clean water. I then placed it in a pot, filled with about 3 glasses of water, added some salt, and set it on the fire to boil.

I then washed my fresh pepper and used a hand grinder to grind it. Then I also sliced some onions.

I decided to use the paste kind of tomatoes as a replacement since I couldn't find any fresh tomatoes at the market.

After my yam was completely cooked and set, I filtered off the water, left it aside, and started to make the sauce.

In a clean, dry pot, I added a little amount of groundnut oil and let it heat , then added the tomatoes, onions, and pepper. Then stirred for approximately 5-7 minutes.

Next I added two Maggie cubes and some salt to taste and stirred for some seconds.

Then I cracked the eggs into a small bowl and whisk it. I then poured it into the pot and allowed it to cook for a few seconds before stirring. Then I turned off the gas when it was ready.
Here we go. Breakfast is served. Enjoy with a glass of cold, fresh orange juice.
